Something different to do w/the same old chicken

Directions

  1. In a small bowl, combine the salsa ingredients.
  2. Cover and refrigerate until serving.
  3. In a large resealable plastic bag, combine lime juice, oil, lime peel, salt and pepper.
  4. Add chicken.
  5. Seal bag and turn to coat.
  6. Refrigerate for 2-4 hours.
  7. Drain and discard marinade.
  8. Place chicken on a broiler pan coated w/cooking spray.
  9. Broil 3 inches from heat for 5-6 minutes on each side or until juices run clear.
  10. Serve w/chicken and salsa.

This was an interesting change of pace, but the salsa was WAY TOO HOT. Something in the neighborhood of 1/4 tsp. of crushed red pepper, maybe... 1 tsp is too much.
