this was so smooth, creamy and thick! takes you right to the islands :) the coconut milk kefir i get at whole foods (i got vanilla) and is made by So Delicious. if you can't find it i think a good sub would be 1/2 cup coconut milk and 1/2 cup vanilla kefir or vanilla yogurt (or soy, almond, rice milk)
- 1⁄2-1 banana, frozen and sliced
- 3 ice cubes (optional)
- 1 small mango, sliced
- 1⁄2-1 cup pineapple, diced
- 1 cup coconut milk kefir
- blend all together until very thick and smooth.
I made this using frozen fruit - a mix of mango, pineapple, strawberry - and my own Coconut Milk Kefir . So I did not need any ice cubes. From prior experience with this particular frozen fruit, I found I needed to add some sweetener - a little dried honey did the trick. It blended up into a wonderful thick smoothie. I used a beaker and my hand blender.
