ingredients
- 1 frozen banana
- 1 cup fresh pineapple
- 3⁄4 cup soymilk
- 1 tablespoon honey (optional) or 1 tablespoon sugar (optional)
directions
- Blend all of the above ingredients in a food processor or blender for 1 to 2 minutes, until smooth and creamy.

All I need is a beach umbrella and this will feel like a Caribbean vacation. I didn't have soymilk so I mixed 1 tablespoon of plain nonfat yogurt and added skim milk to get the 3/4 cup measure to account for the fact that soy is a biot thicker. This was unneeded as the banana provided plenty of creaminess. I did not add sugar or honey as it was plenty sweet on its own. The result was a thick and frosty treat that was well worth 5 stars. To make it even more sublime, I added 2 drops of coconut extract. Yummmmmm. Glad noone else was around to hear my loud slurpping. Thanks Dancer!

I tagged this for a recipe game and printed it out. Then I realized I had mis-tagged. But never fear, I decided I still needed to try it! I agree with Roosie that this is mellow. I used canned pineapple and oraganic skim milk because I was out of soy. I tried it plain but felt it needed the sweetner called for. I used splenda. Once that was added I thought it was very nice. My 3 year old and I enjoyed it quite a lot. A dash of rum extract would be good too!

Yum! Pretty mild, but tasty. I used frozen pineapple and organic 2% milk rather than soymilk, although I think this would be lovely with soymilk. I adding a drop of honey as suggested. Nice and thick with a good mellow "hammock on the beach" mood to it. I'm not big on bananas, but BF (who isn't a banana fan either) and I both agree that the pineapple balances it nicely. I think this would be good too with coconut milk, for even more tropical flavor.
