Bananas substitute for most of the eggs, applesauce for the oil. These are a little more dense and springy, but easier on the calories and have great flavor! I use the Chocolate Buttercream Frosting and top with toasted coconut - YUMMY!

  1. Mix cocoa and boiling water.
  2. Mix buttermilk, oil, applesauce, eggs, banana and coconut extract.
  3. Mix dry ingredients.
  4. Combine dry ingredients with "batter".
  5. Mix in cocoa.
  6. Bake at 350° for 25-30 minutes.
