Bananas substitute for most of the eggs, applesauce for the oil. These are a little more dense and springy, but easier on the calories and have great flavor! I use the Chocolate Buttercream Frosting and top with toasted coconut - YUMMY!
- Mix cocoa and boiling water.
- Mix buttermilk, oil, applesauce, eggs, banana and coconut extract.
- Mix dry ingredients.
- Combine dry ingredients with "batter".
- Mix in cocoa.
- Bake at 350° for 25-30 minutes.
