This cold spring or summer quick luncheon salad is an Australian favorite with a tropical flavour.

Ingredients Nutrition

  • 1 pre-cooked cold chicken, deboned and cut into bite size pieces
  • 12 cup sliced celery
  • 1 cup fresh sultana, halved lengthwise
  • 12 cup macadamia nuts or 12 cup pecan nuts, very coarsely chopped
  • 2 tablespoons mayonnaise
  • chopped parsley (for garnishing)

Directions

  1. Mix all ingredients together in a large bowl.
  2. Chill and serve on a lettuce leaf garnished with the chopped parsley.
