      Wow this was very yummy. I wasn't sure about the pineapple juice or coconut milk in this recipe of how it would turn out. I'm very glad I gave it a shot. There were 0 complaints from hubby. Which means this should have more stars than it does. He's not big on chicken but when he ate this, he LOVED it! The only thing I didn't add was the nuts because I didn't have any. But next time I'll remember to pick some up. Also I added more crushed red peper than called for, next time I'll stick to the amount listed (it had a kick!).Thanks for this Tropical hit!

      MMmm the rice was so good and flavorful. I halved the recipe for the 2 of us and used 1 cup of rice. The store was out of macadamia nuts so I used toasted walnuts which gave it a nice crunch. Next time I will reduce the amount of time I saute the breasts from 8 min. to 5 on each side as the chicken was on the dry side. This was a nice take on chicken and rice!

      Just made this for dinner tonight and I have to admit that I made a couple of changes to suit what I had on hand. I used wild rice, not white, mandarin oranges, not pineapple and green onions, not regular. In spite of the changes my hubby and I thorough enjoyed every bite! He wanted to know when I would make this again! Lovely recipe and the red pepper flakes added a nice kick. Thanks Jeri for a great keeper!
