  • 750 ml chilled unsweetened pineapple juice (3 cups)
  • 185 ml malibu liqueur (3/4 cup)
  • 125 ml bicardi rum (1/2 cup)
  • 1 cup ice cube
  • 500 g rock melons, chilled, desseded, peeled and coarsely chopped
  • rock melon, wedges sliced thinly to serve

  • Place the pineapple juice, malibu, bacardi, ice and rockmelon in the jug of a blender and blend until smooth.
  • Divide the mixture among serving glasses. Place a melon wedge on the edge of each glass to serve.
  • enjoy.

I live in Keilor Downs, Victoria in Australia. I am a receptionist in Melbourne. My favorite cook books are anything Weight Watchers or Simply 2 good 2 be true also any muffin or scone cook books. I love cooking easy stuff but I love a challange ocasionaly on the weekends when i have a bit more time. My pet peeve is how much capsicum/bell peppers are in recipes now as i am elergic to them.
