I have made these a couple of times, and have enjoyed them. I cut back on the sugar to 3/4 c, and didn't use the spices. Last time I baked, I used 1 cup of rice flour along with the 1 cup of all-purpose. (A recent guest had some diet requirements, and now I have some rice flour left to use.) I really enjoyed the texture with both kinds of flour. I will make these again!

WONDERFUL!!! I made 2 loaves instead of muffins, and they came out beautiful! (350 for 55 minutes.) I did cut back a wee bit on the cloves for our taste and used 1/8 tsp. , and subbed about 2 cups blueberries for the raisins. (I would've liked to have tried it with raisins, but my hubby didn't. ROLLIN' my eyes!) But it turned out great, lucky for him. ;) :) LOL! LOVED the rum and macadamias in it!Made for the ZWT5! :)
