Really tasty and just alittle bit different than a run of the mill cheese ball or cheese dip.
- 1 lb mild cheddar cheese, crumbled
- 6 hard-boiled eggs, chopped
- 2 scallions, finely chopped
- 1 cup mayonnaise
- Combine all ingredients.
- Mash together with alittle pepper, salt and paprika.
- Add more mayo if necessary to form a cohesive ball.
- Divide into 2 balls.
- Chill, covered at least 1 hour.
- Serve with crackers and small bread slices.
