Trail Mix Cookies

If desired, substitute 2 1/2 cups of prepared trail mix containing fruit, nuts, and coconut for the dried fruits, coconut and chopped nuts called for in this recipe. Be sure to break up any banana chips and whole nuts, and snip any other large pieces of dried fruit into bits.

  1. In a large mixing bowl, beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking power, baking soda, and allspice; beat till combined. Beat in the eggs, mashed bananas and vanilla.
  2. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.
  3. Stir in the oats, dried fruit bits, coconut and nuts.
  4. Drop dough by rounded teaspoonfuls 2-inches apart onto ungreased baking sheet. Bake in a preheated 375F for 10-12 minutes, or till golden brown. Remove cookies and cool on wire rack.
