A wonderful dish of fried potatoes with green chilies and onion. It is the best. I thank my dear mother in law and her mom for teaching me. Hope you enjoy it as much as we do. It has been a staple in our home for over 40 years.

  1. Slice peeled potatoes.
  2. Chop onion.
  3. Heat oil to medium high.
  4. Add potatoes to hot oil and saute about 3 minutes. Add onions and saute about 3 minutes.
  5. Add green chili and cover.
  6. Turn burner to simmer and simmer about 20 minutes, or until done.

Perfect accompaniment to a Tex-Mex meal. From PanNan's suggestion, I cut the oil to 1/4 cup which seemed to be about right.

Yummy. We loved the taste of chilies with the potatoes, and it was a nice change for plain fried potatoes. I added some salt and pepper for our taste, and the only thing I will do different next time is cut the oil back to about 1/4 cup.
