  • Beat eggs lightly in medium bowl.
  • Add pumpkin, sugar, cinnamon, nutmeg, ginger and salt; stir until well combined.
  • Blend in evap. milk.
  • Pour filling in pie shell. Bake at 425 degrees F (220 degrees C) for 15 minutes.
  • Reduce oven temperature to 350 degrees F (180 degrees C) and continue baking 30 to 35 mins longer or until knife inserted in center comes out clean.
  • Cool.

  2. I think I prefer Libby's pumpkin pie recipe. It just tasted odd to me--I think the brown sugar threw me off.

  4. This is the recipe I used this Thanksgiving. The brown sugar makes a difference, so much better than the white sugar, it adds just a hint of caramelly richness in the background. I added the whole can of evaporated milk, and cooked the exact time listed. Bake it longer if you like a very firm pie. Great classic recipe!
