Tortilla Veggie Melts

"A tasty meal to throw together to use leftover veggies. It makes a great lunch, dinner or even a snack. You can use different veggies to your liking. This recipe is for 2 melts, but you can adjust for more servings."

  • Heat olive oil in skillet over medium/high heat.
  • Add carrot, onion, tomato, garlic powder, Italian seasoning, Worcestershire sauce and salt-n-pepper to taste. Cook until onion is almost translucent, then add lettuce.
  • Steam warm tortillas in the microwave, or just have at room temperature.
  • Keep stirring, and when vegetables are tender, divide into two equal portions, and place shredded cheese over each portion.
  • Get warm plate ready with tortillas.
  • When cheese is melted over veggies, use spatula and lift each half portion in middle of tortilla.
  • Fold sandwich as you wish and enjoy!

  2. Made this for the Cook-a-Thon in memory of VickyJ and this is such an easy and delicious meal. You can do almost anything to it. I subbed spinach for the lettuce (that is what I had) and followed the rest of the instructions. I will make this again for a quick meal that I really enjoyed.

  4. I enjoyed this & customized it with what I had. Forgive me all vegetarians-but I couldn't resist throwing in a little diced turkey pepperoni into the filling!! I omitted the lettuce-used dried minced onion, zucchini & broccoli. I messed with the spices-used some oregano, garlic powder, seasoning salt & black pepper-loved the worch & will use some onion powder next time. I only used a few tbsp of reduced fat mozz & cooked this like a quesadilla so the tortilla would be nice & toasty. At the last minute, I mixed some hot salsa & fat free sour cream together & used that as a dip-which was just fabulous & gave it a great bite. Thank u for sharing this!
     
  5. I enjoyed this yummy and healthy recipe. I used zucchini and yellow squash for the veggies as that's what I had on hand. I will probably make this often. Thanks!

  3. I made these for our dinner today to serve with some soup. I used baby spinach leaves instead of the lettuce, which went really well. I just tossed them in and let them wilt in the heat of the pan after I had cooked the onion and carrot. I also waited until then to toss in the tomato as well. Then I divided the mixture between two tortillas, topped with the cheese and two more tortillas and baked them in a hot oven to melt the cheese and brown the tortillas. Delicious! I'll make these again Vicky. We loved them!

Hello! I am a resident of WA state, and I must say I love it here.... especially where coffee flows so freely! I live with my SO, Mark, and he has lived here since 2001 (originally from San Diego, CA). We live a quiet life and enjoy just about anything outdoors. I love to travel... sometimes just to pick a spot on the map and make a weekend out of it. Since I have been here, some of my favorite places to visit are Oregon and Washington (Cle Elum, Leavenworth, Spokane, Bonney Lake, Maple Valley, Issaquah, etc). My favorite place in Seattle is Pike Place Market, even though I don't get there often. And, Mt. There was a question posted in one of the forums about who I would love to have for dinner, right now. I answered God, Jesus, my mom, Grandma Lundin, Grandpa Lundin and Aunt Sig. They are my role models in life. Each has molded me into the person I am now. My fondest memories are spending Thanksgiving and Christmas-time at my Grandma's house, and the whole family around. SO MUCH good food! I lived in that small city my whole life and graduated from high school just outside of town. I have a strong restaurant background.. everything from Pizza Hut to a local italian restaurant called Vullo's. It seems, though, I have a passion for machining technology, even though I didn't go to school for that. I grew up with a local manufacturer of machine/tooling systems soldering/wiring circuit bds and assembling whole systems. That wasn't enough for me so, I went to college and obtained my AAS in Electrical Technology. The same company hired me back to work in their service dept as a technician. I had planned to go further to become an electromechanical engineer for the company, but I was laid off. I have been out of it so long, I would probably have to start over from scratch.. .that is the problem with electronics/technology.
