Tortilla Ranch Stew

Yummy stew version of the Texas favorite King Ranch Casserole. Good to warm you up on a cold day!

Ingredients:

Servings: 4

• 1 cup onion , chopped
• 1 cup green bell pepper , chopped
• 1 cup red bell pepper , chopped
• 1 cup celery , chopped
• 1 cup whole kernel corn
• 1 can low-fat cream of celery soup
• 1 can 98% fat-free cream of chicken soup
• 2 (10 ounce) cans chicken , do not drain
• 1 can rotel
• 1 clove garlic , minced
• 2 tablespoons chili powder
• 2 cups water
• 12 corn tortillas , torn into pieces

Directions:

1. Saute onions, peppers, celery and garlic in nonstick skillet.
2. Add corn, soups, chicken, rotel, chili powder and water.
3. Heat thoroughly.
4. Add tortillas and serve.
