  • Whip eggs, half and half, salt and pepper to taste.
  • Warm tortilla in skillet and set aside.
  • Melt butter in a 10" non-stick skillet that has been coated with cooking spray and heat until bubbly.
  • Pour in egg mixture and pull eggs toward the center from all sides.
  • Remove from heat when the eggs are still moist, but no longer run.
  • Top with remaining ingredients, being sure to sprinkle over entire omelet.
  • Slide omelet onto the warmed tortilla and roll up bottom edge, then fold in sides about 1" and continue rolling until completely rolled.
  • Lay in plate seam side down.
  • Let rest for a couple of minutes and cut in half.
  • Serve with favorite salsa or relish.

  5. Delicious and different from standard breakfast taco fare. Substantial enough for dinner, serving size is very generous. I never would have thought to roll an omelet in a tortilla but it's wonderful, light and fluffy. The only change I made was to saute the ham, onion and peppers together before adding to the omelet. What a great idea! Thanks, Jellyqueen!

Tweaks

  1. DH is out of town and this made a terrific breakfast for me. I used fire roasted bell peppers and lightly sauted them with the onion and jalapeno pepper. Used salami instead of the ham. The tortilla was whole wheat and it was topped off with a wonderful sweet/hot pepper relish. Thanks JQ!
