Tortilla Chicken Casserole

"Easy tasty casserole just right for lunch or dinner. Serve with a green salad and perhaps some refried beans. If you wish you may skip the center layer of tortillas and only use 6 tortillas (personally I like the center layer). If you skip the center layer still put in half of the cheese after you have poured in half of the chicken mixture."

  • Lightly grease 8'x11 1/2' casserole dish
  • Spray a non stick skillet with vegetable oil and brown the chicken along with the garlic & onions.
  • Remove from skillet.
  • Add corn, red pepper, jalapenos and warm through.
  • Add Tomato sauce, cumin, cilantro, hot sauce, all spice, salt & pepper, bring to a simmer.
  • Add tomatoe & return the chicken to the skillet, stir, bring to a simmer.
  • Line the greased pie plate with 3 tortillas.
  • Pour in half the chicken mixture & top with half the cheese.
  • Cover with 3 more tortillas.
  • Pour in the remaining sauce, top with 3 more tortillas.
  • Sprinkle the top with the remaining cheese.
  • Bake in 350F oven for apprx 25 minutes or until the casserole is heated through the cheese has melted and is nicely browned.
  • Let it rest 5 minutes, Slice & serve.

  1. This had a nice flavor that sort of reminded me of enchiladas, with lots of tomatoe-ey sauce layered in between all the tortillas, topped with the cheese. I liked this a lot, but I must tell you, there was no was it was ever going to fit into a pie plate at all. I used a large oval casserole (which was the perfect size), but I suppose a person could also use their lasagna pan and have a little extra room in that-- but toss the pie pans out the window!
     
  2. Great tasting casserole, halved the recipe and used three tortilla's. Added more Jalapeno peppers and when I served it drizzled sour cream, mixed with more coriander, on top.

I think poaching the chicken pieces instead of browning them in the skillet would give them a better texture (mine were a little chewy). Also -- I needed more than the listed amount of cheese to be able to cover the top layer of tortillas so they wouldn't dry out.
     
  4. 5 stars all the way!!!!!!!!!!!!!! I stir fried everything except the tomatoes till onions were translucent and chicken was tender. Then added the sauce. Skipped the Roma tomaotes because I didn`t have them(didn`t need them). This is alot easier then it LOOKS! Lots of flavor! Served with Salsa, Avacado, and Sour Cream! Mexican Lasagne!!!!
     
  5. Excellent recipe. I used sundried california wraps for the tortillas and Tex-Mex blend cheese. It was easy to make and enjoyed by all.

  1. What a delicious recipe! I really enjoyed the hearty combination of ingredients in this. I did stack mine up in a deep dish pie plate and had no trouble fitting it all in. I used all of the ingredients listed, altough I did seed the jalapenos to reduce the heat as I was serving this to children. The only exception was to replace corn tortillas with whole wheat flour tortillas. As nice to look at as it tasted, too.

On January 10 2010 I will celebrate 9 years of Life with Zaar. I can't imagine being without it! It has become part of my daily routine. I feel very privileged to be one of the hosts on the Photo Forum. Taking photos of my culinary efforts is a full time hobby and I love it. My friends all know what to expect when they come to dinner "Are you finished taking pictures?" or "Did you get a photo of so & so?" I never let them wait too long and the food is NEVER cold! I now have over 6000 photos on Zaar - some fairly good and some definitely not so good. I am happy to say that practice does help. My roots are in Vancouver BC Canada - a very beautiful city that holds many wonderful memories for me. In 1990, I decided that for my retirement years I may want to settle in a smaller community and found a slice of heaven in the North Okanagan B.C. I love living here but every once in a while I miss the bright city lights, the Broadway shows and some of the small wonderful ethnic restaurants that Vancouver abounds in. That is easily resolved. I just take a trip to the coast, visit with friends for a weekend see a show and feast on Dim Sum or other specialty foods. I am getting a bit long in the tooth but was a very adventurous person. I have river rafted Hell's Gate on the Fraser river, been up in a glider over Hawaii (no not a Hang Glider!), gone hot air ballooning in the Napa Valley & the Fraser Valley, driven dune buggies on the dunes in Oregon, Para sailing in Mexico and tried many other adventurous, challenging, fun things. I have yet to try bungee jumping or sky diving. I may do them yet. I love to travel and experience other cultures. Mexco has been a favorite haunt. I have visited that lovely country many many times. Australia is another favorite as is England! In the past 16 months I have taken off 61 pounds and feel wonderful. I am off all medications and all systems are GO! In years I may be 79 but in spirit I am still in my forties. We are only as old as we allow ourselves to feel. Always think positive. Do something a bit challenging every day & always do something silly every day. Be a kid again! Laugh every day - it is internal jogging.
