TORTILLA CAMPESINA (Potato Pudding)

ingredients

• olive oil
• 4 onions
• 100 g smoked bacon, chopped
• 1 teaspoon garlic powder
• 1 kg boiled potato, , with skin and cut into dice
• olive oil
• 6 tablespoons cream
• 2 teaspoons paprika
• salt and black pepper
• 12 eggs

directions

1. Chop the onions and saute them in a some oil.
2. with the bacon.
3. Mix the rest of the ingredients and seasonings and add the onion and bacon mixture.
4. Add the beaten eggs, and pour the mixture into a greased oven-proof baking dish.
5. Cook in a medium oven until the eggs are set and the top is a bit browned.

Great recipe easy to make and easy to serve either hot or at room temperature. I have also added grated cheddar cheese and replaced the smoked bacon with chorizo sliced sausage which I simply placed on top of the other ingredients before baking. Thanks a million for the recipe - a family favourite
