This is my family's new favorite cake. It starts with a marble cake mix, with coconut and nuts and cream cheese. The cream cheese stays a bit soft for a while after coming out of the oven.
- 1 cup chopped pecans
- 1 cup flaked coconut
- 1 (18 1/2 ounce) box fudge marble cake mix
- 3 eggs (or as called for by your cake mix)
- 1⁄3 cup oil (or as called for by your cake mix)
- 1 1⁄3 cups water (or as called for by your cake mix)
- 1⁄2 cup butter or 1⁄2 cup margarine, melted
- 1 (8 ounce) package cream cheese, softened
- 3 1⁄2 cups powdered sugar
- Butter the bottom of a 9x13-inch pan; Sprinkle pecans and coconut in pan.
- Prepare cake mix according to package directions; pour over pecans and coconut.
- Combine butter, cream cheese and powdered sugar; mix well.
- Drop in dollops over cake batter.
- Bake at 350F for one hour.
- Serve with whipped topping.
This is also known as Earthquake Cake when made with German Chocolate cake mix because that is what it really looks like. It is not a hard cake to make. The best way to make it explode is to put a large dollop and then a small dollop of the cream cheese mixture leaving a little space between until you cover the 9 x 13 baking pan. And OMG...it is rich and delicious and to die for...this is my Number 1 cake. It is also referred to as Upside Down German Chocolate cake. (Just be sure and not do like my MIL and forget the butter, or it will just sit there and not explode at all...and you won't get all that gooey decadence!!! LOL...she said, "I wondered why it tasted different!) You can also make the original German Chocolate cake. Recipe #3169 has it's own unique icing which is also rich and delicious and to die for...which makes it my Number 2 cake. Either way, whichever one you choose you can not loose!!!
Yum!! This was very good. I didn't have a marble cake mix so I just used a yellow. I think with the chocolate in it would have been even better. Thanks for a great recipe. This will become one of our family favorites too!
