Tomatsmør (Tomato Butter)

"From a little Norwegian Recipes book of mine. Serve cold with hot grilled or fried fish. Yields 1/2 cup."

• Yields: 1/2 cup tomato butter
• Serves: 8

ingredients

• 1⁄2 cup unsalted butter, softened
• 2 tablespoons tomato paste
• 1⁄2 teaspoon salt
• 1⁄4 teaspoon sugar

directions

1. Cream butter with an electric mixer at medium speed.
2. When light and fluffy, beat in the tomato paste, salt and sugar.
3. Transfer to a serving bowl and chill until ready to serve.
