Light side dish
- 8 slices tomatoes
- 2 tablespoons crumbled feta cheese
- 1 tablespoon balsamic vinegar
- 2 tablespoons minced fresh basil
- Arrange tomato slices on a serving plate. Sprinkle with feta cheese. Drizzle with vinegar; sprinkle with basil and pepper.
Simple ingredients, but very tasty and fresh. I used heirloom tomatoes and just added some salt and pepper. I used extra basil and feta, just because I love them both. I'll be making this a lot this spring and summer when the homegrown garden tomatoes ripen. Thanx for posting!

Sometimes the simplest dishes are the best and here's a great example of that. I used really good on the vine tomatoes and the kick of freshly ground black pepper at the end just finished it off perfectly. Made for my adopted chef for PAC 2011. Thanks Ck2plz! :)
