    This recipe is Southern style fried tomatoes with a mellow cheese sauce over toasted French bread. What could be better comfort food?

      Combine 1/2 cup flour, 1/4 teaspoons salt, and 1/4 teaspoons pepper.

      Cut each tomato into 3 thick slices; dredge tomatoes in flour mixture.

      Heat vegetable oil in a heavy skillet; add tomatoes, and fry slowly until browned, turning once.

      Remove fried tomatoes from the skillet,and keep warm.

      Melt butter in a heavy saucepan over low heat; add 1/4 cup flour and mustard, stirring until smooth.

      Cook 1 minute, stirring constantly.

      Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.

      Stir in the cheese and next 2 ingredients.

      Arrange 2 slices of bread on each serving plate.

      Top bread with 2 tablespoons of cheese sauce and 2 slices of fried tomato.

      Spoon remaining sauce over sandwiches.

      If desired, garnish with paprika and parsley.

      Serve immediately.

      Yield: 6 servings.

      I found it somewhat bland and not at all worth the effort (including clean-up) involved.

      Delicious and easy. I used a dark mustard so the sauce was a bit darker than if I had used a yellow mustard. I served this as Saturday dinner with a bratwurst on the other half of the bun Thanks Sharon love the recipe

      Mmmmmm, yummy! I love the little bite of the mustard powder ... be sure to heed the "firm" tomatoes suggestion, too. I can't wait to make this with some of my fresh heirloom tomatoes from the garden this summer! This is almost better than grilled cheese and tomato soup! Thanks so much for a winner, something a little different!
