This was easy to put together and very tasty; the lemon juice was a nice touch. Since I have a stick blender, I used that for a few pulses, rather than dividing the soup. It was a great blend of thick soup and chunks of vegetables. Thanks Lisa!

Ingredients Nutrition


  1. Mix all ingredients except lemon juice and salt in a large soup pot.
  2. Bring to a boil.
  3. Reduce heat. Cover and simmer 30 minutes.
  4. Stir in lemon juice.
  5. Puree half of the soup in a blender until smooth.
  6. Return puree to pot.
  7. Add salt to taste.
  8. Heat through.
