  • Mix all ingredients except lemon juice and salt in a large soup pot.
  • Bring to a boil.
  • Reduce heat. Cover and simmer 30 minutes.
  • Stir in lemon juice.
  • Puree half of the soup in a blender until smooth.
  • Return puree to pot.
  • Add salt to taste.
  • Heat through.

  1. This was easy to put together and very tasty; the lemon juice was a nice touch. Since I have a stick blender, I used that for a few pulses, rather than dividing the soup. It was a great blend of thick soup and chunks of vegetables. Thanks Lisa!
