This is a very versatile recipe you can serve it over pasta (MMMmm), use it as a topping for crostini. put it over fish, whatever and it is low calorie
- 2 lbs ripe tomatoes, , seeded,peeled and finely chopped
- 1⁄4 cup fresh basil, chopped
- 3 cloves garlic, chopped
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- salt & pepper
- Combine all the ingredients and mix well.
- Heat and serve over your favorite pasta.
