Awesome homemade soup :) My husband who can be hard to please loved it.

I used vegetable stock to keep this meatless. I also subbed frozen mixed vegetables for the green beans, and added double the amount (2 cups) to get some extra vegetable goodness. This was good with hot French bread on a cool night.

My family and I loved this recipe! I would have given it 5 stars if I used all the ingredients but I did not have chick peas or beans on hand. Nor did I use carrots. Very good though, thank you!!

I have made this several times and love it. I didn't think I would be pleased unless I added some meat to this recipe, but it great just as it is. I leave out the chick peas & use white beans or just double up the beans & tomatoes just my personal taste. And besides I always can way too many green beans & tomatoes!!

I mae this soup for lunch today since it was a little chilly here and it was fantastic! I used natural chicken stock, 8 ounces dried tortellini, and sprinkled Parmesan cheese on the top after serving. I used the chickpeas but may use cannelini beans next time. I left out the green beans because I forgot to buy them. Thanks for posting a great recipe!

This is a very satisfying meatless meal. The flavors of the veggies, garilc and tortellini came togeter nicely. I made a couple of changes that I feel didn't affect the outcome as far as taste goes. I'm not a big chick pea fan so I added a can of white canneli beans instead. I also added 3 cans of low-sodium chicken stock instead of 3 cups. Also, I'm not sure how much 250 grams of tortellini is, but my kids are huge fans of this pasta, so I added 3 cups (frozen) and that seemed to be a good ratio.
