We had this as a side dish to a vegetarian meal, I know I will make this again, but also for lunch or as a snack.Good flavors and one of the few times that pesto from a jar works really well.It also was put together in minutes, I used round pita bread for it and they looked like little mini pizza's,I did add some fresh garlic, olives and a drizzle of olive oil, simply because I like those ingredients and I was sure it wouldn't damage the recipe.
Mmmmm! This is great for breakfast on crusty sourdough steak rolls! Sublime!

As usual, with your recipes, Derf 5 Star - I used a Naan bread and next time would use some other flat bread - (not the fault of the recipe). I used Scarpitti Pesto sauce and it is excellent. may add a Jalepeno next time too - I do like "HOT" We enjoyed this as our Sunday appetizer along with a Martini Thanks again Derf for a tasty recipe
Ok, went to bed at 10. By 1130 I was wide awake. No problem, midnight snack time! Split an English muffin, toss into the toaster, drag out the liverwurst. Smeared half the muffin with the liverwurst, sit down at PC to read a few recipes...Saw this reicpe, hmmm, already had the muffin, fresh tomato over the sink, onion on the prep bar, good tube of pesto in the fridge, as well as mozarella. This was one AWESOME midnight snack, forget the liverwurst. Tomorrow night's dinner?....BOTH halves of the muffin using this recipe, and maybe a light pasta/pea salad on the side. I hate that summer is about gone, fresh tomatoes and sweet onions will be a thing of the past. Right on, Derf with this winner!
