An all-purpose recipe that can be used for bruschetta, fresh bread, pizza, nachos, etc.
- 3 tomatoes, finely chopped
- 1⁄2 yellow bell pepper, coarsely chopped
- 1⁄2 orange bell peppers or 1⁄2 green bell pepper, coarsely chopped
- 1 garlic clove, minced
- 4 green onions, chopped including tops
- 1⁄4 cup greek pitted black olives, chopped
- salt and pepper
- Combine tomatoes, bell peppers, garlic, onions and tops, olives, salt and pepper in a bowl.
- Sprinkle lightly with salt and heavily with pepper and mix well.
- Use as a topping as desired.
