A recipe from the Ultimate Barbeque cookbook. I served it on hotdogs today but will try on burgers tomorrow. It was great.
- 1 medium red onion, sliced thinly
- 2 tomatoes, sliced
- 2 tablespoons olive oil
- 2 teaspoons lemon juice
- 1 tablespoon fresh basil, chopped or 1 teaspoon dried basil
- salt and pepper, to taste
- Soak onions in ice water for 10 to 15 minutes; drain well. Combine in dish with tomatoes. In small bowl, blend dressing ingredients with wire whisk. Pour over sliced tomatoes and red onions, and toss.
Very simple, and delightful. Apparently soaking the onion slices in ice cold water removes the stinging bite of the onions and mellows out the taste so the eyes don't burn; it must have worked because DH didn't hand me his onion slices. Thanks for keeping the volume of salad dressing in line with the portions. Made for Newest Zaar Tag.
This was so easy and good too. I actually used mine in a salad, which worked well. Thanks!
A wonderfully easy and delightful change this hamburger topper is. I increased the dressing by an additional half so as to be able to add a yellow tomato along with the red tomato and onion. These burgers were delicious wrapped in large red lettuce leaves instead be served on buns. This tasty topping is a keeper thanks for the post.
