Entered for safe-keeping, from Weight Watchers Magazine, September-October 2008, only 1 "thingie" for 1/3 cup tomato tartar with 3 endive leaves. This is a light bite for snack or appetizer.
- 2 tomatoes, seeded and chopped
- 6 brine-cured kalamata olives, pitted and chopped
- 1 tablespoon red onion, minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon capers, drained
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- black pepper, to taste
- 12 leaves endive
- Combine all ingredients except endive leaves.
- Spoon into endive leaves.
