Tomato Simmering Sauce for Fish

Total Time

Works well for strong flavored fish like tuna, bluefish, and mackerel. From a fish cookbook ripped from the days when I didn't keep track of the source.

Ingredients Nutrition

  1. Cook onion and celery in butter until onion is limp.
  2. Add tomatoes and cook for about 5 minutes.
  3. Add remaining ingredients and simmer for 10-15 minutes.
  4. Cook fish in this sauce and serve with the sauce over the fish.

This is a delicious sauce for fish! I used tilapia fillets because I don't care for stronger fish, but it was all terrific! I think I may cut down on the brown sugar just a bit next time I make it since I'm not using such a strong fish. I left out the celery and black pepper, and because it's all I had on hand I used apple cider vinegar instead of white vinegar and honey mustard instead of the prepared mustard. Everything was really tasty and we'll definitely be making this one again. Thanks for sharing it! :)
