Tomato lovers? You've got to try this! Outstanding as a side dish or as a topper for toasted breads or bagels. The flavor is so fresh, tastes just like summer! The oil seems to bring out the juices in the tomatoes and the salt and pepper, in it's simplicity, bring out that special tomato tang. Love this stuff!
Yes, I will agree w/ Chelle-I dated an Italian from Long Island and his Mama, Betty, was an EXCELLENT cook! This was one of the things she made that I LOVED...we usually ate it on top of hot bread (which she served with every meal). It was not meant to be forever with he and I, but his Mama taught me a lot about good cooking that lives on in my kitchen. If you have any of this left over, it tastes excellent in a biscuit. this salad is awesome and easy! I dated an italian once and he turned me on to this. No ring outof the deal, so I'll settle for the recipe.

I had extra tomatoes in the garden so had decided to try this recipe even though it sounded deceptively plain. WOW!!! This was great! Flavor was excellent and went well with our grilled steaks we were having. I have been snacking on them since. Will be having this constantly in stock in my fridge. Thanks for a great recipe!!
Found this really simple but very yummy! Best with fresh garden tomatoes of course! I love fresh basil with tomatoes. I added a little red wine vinegar to give it some kick. Perfect!
Can't believe I never rated this,but it is so good! I have made this several times, added fresh mozzerella in someof them. Good with the cheese, good without. Actually this is really all you need to eat with a good burger from the grill. I use this as the topping for my burger, and eat a bit more on the side. You must use really fresh tomatoes to get the best flavor, but so easy and tasty.
I made this with a mix of different varieties of tomatoes from the garden. We loved the simple flavor of the dish. Then I tried with fat free feta cheese-that was great, too. Next I tried with a splash of raspberry vinegar, then balsamic vinegar, then white balsamic. All were delicious, but the white balsamic turned this into a killer dish! Thanks for providing me with a fun day in the kitchen.
This was excellent! I brought this to a cookout at my parent's house...they were debating about putting out salad to eat (didn't have to when they saw I brought this). Loved by all! I did add a few splashes of balsamic vinegar and it was fantastic. Will make again! Great for summer!
