I found the recipe for this salad in country living at work today, sounds yummy, I plan to try it soon. Country living recommends using heirloom tomatos in this recipe.
- 1⁄4 cup white vinegar
- 1 teaspoon green chili pepper, finely chopped (such as serrano, thai, or jalapeno)
- 3⁄4 teaspoon salt
- 1 cup yellow onion, thinly sliced
- 4 large tomatoes, ripe cut into wedges
- Combine the vinegar, green chili, and salt in a medium bowl. Toss with the onion and set aside for 5 minutes to allow flavors to blend. Add tomatoes and combine thoroughly. Set aside for 15 minutes before serving.
