I got this from my mom, she made this all the time while I was growing up. I have continued to make it for my family, and we all LOVE IT! I always make this in the morning and let sit all day in fridge. GREAT with Italian Bread!
- 4 tomatoes, diced (real Ripe ones)
- 1⁄2 onion, chopped up
- 2 garlic cloves (minced)
- 4 tablespoons olive oil or 4 tablespoons vegetable oil
- salt & pepper
- parsley or basil
- Put all Ingredients together in a bowl with a lid. Put top on and shake. Let sit for at least an hour. (2-4 hours for it to really marinate together) Then serve with Italian Bread, or whatever you prefer.
Your mom knows her salads! This is so good!! I made it early in the morning,let it sit in the fridge and had it for lunch with a mini loaf of Italian cheese bread...ummmm!! I used the best tomatoes that I could find but I bet this will be so much netter in the Summer with homegrown tomatoes! Thanks so much for posting!
