For a low calorie soup, this is quite good. I used fresh tomatoes and simmered for 25 minutes, then pureed and added brown rice. Next time I would double the savory aspect. I used dried thyme. But basil would be good also. Thanks Boomette.
This is very good soup. I used canned, diced tomatoes, a red onion and brown rice to make it. Made for 1,2,3 Hit Wonders
This is delicious even though I forgot the milk and then decided not to add it. (I would have used rice milk anyway). For the onion I used shallots. I used a good can whole plum tomatoes which I chopped up myself as I find that better than the pureed version. There is something especially so good about this soup during winter. I would make this again for only as I think DH would shy away from it. Made for 1~2~3 Hits March 2010 ~ It's Not Easy Being Green!!!
I used the last of my fresh garden tomatoes for this. It was awesome! I peeled and simmered the tomatoes then pureed them w/ my immersion blender. I then proceeeded with the rice and simmered longer. Loved it. Thanx for sharing!
I debated with myself whether to use crushed tomatoes or diced. I thought I would use the crushed so I wouldn't have to puree, as I like a smooth tomato soup. I thought the texture was fine, but my "captive audience", dh, thought I should have still pureed the mixture before adding the rice. I didn't have any savory, but I used the substiution of thyme, which worked out fine. I can see that different brands of canned tomatoes will affect the flavour of the soup, so subtle flavour nuances are possible. Also, since I only had 2% milk, I mixed it w' evaporated milk for a richer texture. Made for Everday is a Holiday Dec'09.
