Tomato Relish

"I created this when we grew tired of the green tomato relish that most fish houses have. We live on a lake and eat a lot of Brim, Bass and Crappie. This makes a good side dish for just about anything."

  • chop tomatoes.
  • chop onion.
  • seed and chop pepper.
  • mix together with vinegar and salt.
  • add more pepper if desired.
  • let stand in frig about 1 hour so flavors can blend.
  • cook time is chill time.

I was raised in Bayou country. Liked to watch my uncle wrestle aligators. I am pure Cooney ( to some of you that means coon ass. Also loved to pole the pireau down the bayou. At one time my uncle tied his brother to a tree in the swamp and left him there. they got him out before the water got to his chest. Sinful uncle.
