the traditional slate caprese is one of our favorites. We usually try it at every resturaunt that has it. The simplicity is beautiful. I'm found your version this morning while looking for a quick easy, LAST minute dish for a potluck. Thank you! I already know this is a winner without even trying it. The key is good olive oil! Yummy.
- 2 lbs firm ripe tomatoes
- 8 ounces mozzarella cheese, cut in small cubes
- 1 cup fresh basil, chopped or 1 teaspoon dry basil
- 1 cup fresh oregano, chopped or 1 teaspoon dry oregano
- 3 tablespoons olive oil
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon sugar
