Tomato Mozzarella Salad

This quick fresh salad screams summer to me. I love taking this on picnics and potlucks.

Ingredients:

Servings: 6

• 1/4 cup red wine vinegar
• 1 garlic clove, minced
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 2/3 cup olive oil
• 1 pint cherry tomatoes, halved
• 1 1/2 cups mozzarella cheese, cubed
• 1/4 cup chopped onion
• 3 tablespoons fresh basil, minced

Directions:

1. In a bowl combine vinegar, garlic, salt and pepper whisk in oil. Add remaining ingredients toss to coat.
2. Cover and refrigerate for about an hour stir occasionally.

This has an excellent vinegarette. I did omit the cheese as I was serving the salad with a panini sandwich loaded with lots of cheese. I subbed a fresh cucumber and a purple onion. I was very happy with the salad & can understand why it would be a hit at a summer potluck. Made for ZWT4.

I loved that this recipe used cherry tomatoes because they are tasty and easy to just halve. I used fresh mozzarella cheese - my favorite - and a Vidalia onion. This is your basic but delicious tomato and mozzarella salad which is easy to prepare with terrific results. I made this for Zaar World Tour 4 for the Tastebud Tickling Travellers.

This was great with our local farmers' market fresh mozzarella and some cherry tomatoes a friend gave us. I didn't have any red wine vinegar on hand so I used balsamic vinegar which was very good. I bought some red wine vinegar special to try this again for a church lunch tomorrow. Also I used a purple onion as Susie D. did and that made for a nice colorful salad! Thanks for sharing!
