This is another of my favorite Minnesota hotdishes. Once again, this is my mom's recipe that she used to make when I was a kid.

Ingredients Nutrition

  • 1 lb ground beef (you can also substitute your favorite "other" ground meat)
  • 2 cups elbow macaroni, uncooked (or 3 cups if you want it to go farther)
  • 1 (28 ounce) can diced tomatoes, do not drain (you can also use crushed if you like bigger pieces of tomato)
  • 1 (14 ounce) can sweet corn
  • 2 (10 ounce) cans condensed tomato soup
  • 1 medium onion, chopped (whatever your favorite kind, I use white onions)


  1. Brown ground beef and drain off grease.
  2. Cook macaroni according to package directions.
  3. In a large pot or casserole, combine ground beef, noodles, tomatoes, corn and soup (use soup as is from the can, do NOT add anything to it).
  4. Simmer in large pot on stove, or bake at 350 degrees in casserole dish until heated all the way through.
  5. Top with your favorite variety of shredded cheese before serving.

ok so i created a profile just to be able to write a review for this recipe. it was fantasic! i was looking for something to do with the can of condensed tomato soup i had(and by itself i hate the taste of it) and i happened to have all the ingredients to make a half recipe. i made a couple additions/subsititutions: i left out the meat since i had none and used tomatos that had garlic, basil and oregano flavor, i added minced garlic(from a jar) as well as basil. i was really nervous about this recipe since the liquid didn't seem to be enough but it was. also, recipe doesn't say to drain or not drain the corn, i did and glad i did. would have been too much liquid had i not. all in all, great recipe for a fast easy dish. am definitely saving this one for another night
