Zesty dressing made with fresh garden tomoatoes - love to serve it over fresh cucumbers!
- 1 large tomatoes
- 2 tablespoons olive oil
- 1 garlic clove
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon thyme (or 1 fresh sprig)
- 2 tablespoons balsamic vinegar
- Mix all but tomatoes together. Pour over and let sit at room temperature for 1 hour. Refrigerate up to 8 hours. Serve over salad or sliced cucumbers.
I agree with PaulaG that the directions could have been more specific. However, having said that, the dressing itself was wonderful. I seeded and chunked the tomatoe and let it wait at room temp for an hour. I then used it over cucumbers. Excellent! Adopted for Spring 2008 PAC.
This was served over a cucumber and squash salad. The directions could have been more specific. I wasn't sure what to do with the tomato. In the end I whirled everything together in the blender. Made for *PAC Spring 2008*
