Nice, fresh, salad. I used apple cider vinegar and used fresh herbs from the garden.
This recipe is so tasty have made it for many potlucks. I belong to a cooking club and I am presenting it along with the recipe at our next function. If you have left overs, just drain the mixture so the veggies stay crisp for the next day.
Had it as a side dish at a BBQ when it was 100 degrees outside. Nice because I didn't have to worry about keeping it cold. Very colorful dish; easy to make and tasted wonderful!

YUM! Used fresh cukes out of the garden and roma tomatoes, chopped them up the same...diced :) I also used a bootie-load of fresh basil (I'm a nut for it, what can I say!) Used rice vinegar, cuz I'm silly and I thought that's what the recipe called for. And a vidalia onion cuz that's what I had, and added 1/2 of a small green pepper...lovin the garden right now! Great salad and DH says that we should try it on some brushetta tomorrow nite...cucumber bruschetta! Thanks for a great one!
This is scrumptous! I made a few modifications in that I left out the green pepper, used halved grape tomatoes and fresh herbs instead of dried. (I used about a tablespoon each for the fresh herbs.)...and used green onions because I didn't have red. Deelish!
Made it with diced veggies and balsamic vinegar since I was all out of white wine vinegar. Also used fresh basil. This was wonderful and the no-veggie-eating husband had seconds!
I originally made this with balsamic vinegar since I didn't have white wine on hand and it was just ok. Today I bought some white wine vinegar and made it again and it was just great. I used my nicer dicer to dice all the veggies instead of slicing them. The salad was pretty and very tasty. Thanks for the recipe.
