My neighbor from years gone by gave me this recipe. It takes very little time to make and a great alternative to traditional macaroni salad.
- 2 cups macaroni, cooked
- 1⁄2 cup mayonnaise
- 1 tomatoes, chopped
- 1⁄2 cucumber, peeled, sliced and quartered
- 1⁄2 teaspoon celery salt
- 1⁄2 teaspoon pepper
- Cook macaroni, according to package directions.
- Drain. Rinse with cold water.
- Mix all ingredients together.
- Chill 30 minutes.
I usually make this with drained, canned tuna, and chopped onion. Nice and different.
