This is one of my grandmother's recipes which has been passed on. Delicious accompaniment for baked or grilled meat or as a base for a barbecue sauce.
- 6 quarts tomatoes, peeled and cut
- 4 cups vinegar
- 1 tablespoon clove
- 1 tablespoon allspice
- 1 tablespoon salt
- 1 teaspoon dry mustard
- 3 lbs brown sugar
- 4 tablespoons cornstarch
- Peel and chop tomatoes and add to a large pot. Add 4 cups vinegar and let stand for 2-3 hours. Boil 10 minutes, then add cloves, allspice, salt, and dry mustard. Boil one hour then add 3 lbs. brown sugar. Boil 1 hour, then add cornstarch and boil for 1/2 hour more.
- Jar and seal.
My mother in law use to make this with 1 variation, substitute malt vinegar. Great on eggs, potatoes & my favourite breakfast sausage. Now every tomatoe season I make a 10 lb batch to keep the rest o the family supplied. The bonus is how yummy the house smells when making it.
This is a fantastic receipe! I use the tomato butter as a topping on meatloaf and it is simply irresistable!
