Tomato Braised Leeks

  • Trim root end of leeks& cut off all but 3 inches of the green end.
  • Cut the leeks in half lengthwise; if very large, cut into quarters lengthwise.
  • Rinse well, blot dry with paper towels& set aside.
  • Heat oil in a large oven proof skillet over medium heat.
  • Add bacon& cook for 5 or 6 minutes.
  • Stir in remaining ingredients& cook, stirring occasionally, until thickened, about 8 minutes.
  • Remove skillet from the heat.
  • Remove half of the tomato mixture from the skillet.
  • Arrange the leeks side by side in the skillet.
  • Top with the reserved tomato mixture& cover the skillet.
  • Bake in a preheated 350F oven until the leeks are tender, about 30 minutes.

  1. My neighbor gave me a bag full of fresh leeks from her garden so I had to try this recipe. I did not change a thing and it was fantastic. I especially enjoyed the leftovers the next day, time for flavors to blend. Thanks for a healthy tasty recipe.

In the words of Tracy Byrd, "I'm from the country & I like it that way"!! On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges! We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006. I've participated in many contests & events here on Zaar but this is the first banner that I've posted.
