  • In a medium pot, heat the oil.
  • Add the onion and cook over medium heat, stirring frequently, until tender and lightly browned on the edges, about 7 minutes.
  • Add the garlic and thyme; stir until fragrant, about 1 minute.
  • Add the tomatoes, broth, honey, salt, and pepper.
  • Bring to a boil over high heat.
  • Reduce the heat and simmer, stirring frequently, until reduced by a quarter and thickened, about 15 minutes.
  • Using a standard or immersion blender, puree about half the soup; it will still be chunky and thick.
  • Return it to the pot and stir in the cream.
  • Heat gently and adjust the seasonings.
  • Ladle into bowls, sprinkle with the parsley if using, and serve immediately.

  1. I made this tonight for 120 people at my church. (Have to love that serving # adjust feature on the web site.) I did not substitute anything other than to use regular chicken broth rather than low sodium and subsequently cut back on the additional salt. I couldn't find low sodium chicken broth in 48 oz cans. Also I used my stick blender to puree the soup after adding the tomatoes to the onions but before adding the broth - just because my regular size stick blender would not have been adequate if I had waited until all the liquid was added. <br/><br/>This soup received raves. We were having a relatively simple lenten supper of tomato soup and grilled cheese sandwiches, and people kept coming back for more soup. My five year old even finished his tomato soup. I will definitely try this at home in smaller quantities.
     
  2. Excellent! Used diced toatoes rather than crushed and added freshed diced at the end. Will make again with milk rather than cream to cut the calories....I actually tried it before I added the cream and it was delicicious just lake that. Also may try with basil rather than thyme. Everyone loved it.....so long Cambells!
     
  3. This is the best soup I have ever had. It is delicious and so easy. I used dried thyme and parsley rather than fresh. I usually serve this with perogies and when served with something else it makes 4 servings rather than 2. I also froze some extra soup once and it was still excellent warmed up. Even with the cream it froze surprisingly well.

  1. This is great! I made it (with two small changes - used dried thyme and whole milk instead of cream) when a friend stopped over to pick up her child after a play date and she stayed to eat with us. We all loved it and she asked for the recipe! This will be one I make often. Thanks for sharing.
