Tomato Basil Soup

- 4 cups canned tomatoes (I like to use 1 can of Fire Roasted Tomatoes)
- 2 cups chicken broth
- 2 cups tomato juice (I Like to use V8)
- 1⁄2 cup butter
- 1 cup heavy cream
- 10 -12 fresh basil leaves
- salt
- pepper
directions
- Combine Tomatoes, Broth, and Tomato Juice in a pot and cook on medium high heat for 30 minutes.
- Add the Butter, Cream, and Basil Leaves. Add Salt and Pepper to taste.
- Use an Immersion Blender to get the soup to the consistency that you desire. If you do not have an Immersion Blender, you can use a regular blender and blend the soup in batches.
- Once soup is blended fix a yummy bowl for yourself! I like to add a little provolone cheese and croutons to my soup, but it is just delicious by itself! Enjoy!
