Tomato-Basil Pasta Salad

"This is an easy but tasty recipe for summer. It's great for those ripe tomatoes you have in your garden."

• Serves: 8

ingredients

• 828.06 ml ripe tomatoes, coarsely chopped
• 78.78 ml red onion, chopped
• 59.14 ml extra virgin olive oil
• 29.58 ml red wine vinegar
• 4.92 ml minced garlic
• 2.46 ml salt
• 2.46 ml fresh ground black pepper
• 1.23 ml dried oregano
• 340.19 g fusilli or 340.19 g your favorite pasta
• 236.59 ml fresh basil leaf, cut into thin strips

directions

1. Put tomatoes, onion, olive oil, vinegar, garlic, salt, pepper and oregano in a large bowl; toss.
2. Let stand at room temperature at least 30 minutes or until tomatoes release their juices, tossing occasionally.
3. Cook pasta as package directs.
4. Drain and add to bowl with tomatoes; lightly toss.
5. Let come to room temperature.
6. Add basil; toss.
7. Serve or refrigerate up to 1 day.

What a wonderful recipe for a hot afternoon. Good strong flavors, simple dressing, fresh ingredients..how can you go wrong?

This is easily worth 5 stars. The flavours are full but not heavy- the tomato and basil blends beautifully with the vinaigrette. Already planning to make it again! I did make one change- I left out the red onion as I find the flavour too strong. Thanks for a recipe I'll make over and over!

This is a delicious pasta salad. It is simple and I appreciate how the star ingredients are able to shine through. Incidentally, this is a wonderful use for those garden tomatoes and basil. The dressing is simple and pure- tasting. I really love the hint of oregano. ~Made for the Aussie/NZ September Swap~
