      My family thought this was the best version of Mahi Mahi EVER! I followed the recipe as is, but did not have regular paprika and subbed smoked paprika. Excellent dish and very flavorful! Never cooked in parchment paper before. Very easy and yummy. This recipe does not specify amounts, but I would say I used a whole clove of garlic chopped fine, per filet. I also used a fair amount of the seasoning and oil & vinegar. Maybe that made the difference for the flavor.

      Absolutely yummy!! I hesitated to make this recipe because I thought the Italian flavors might be too much for me. I was wrong! I used fresh tomatoes and basil from my garden and followed the recipe exactly. My entire family loved it. I also made homemade tartar sauce using basil, capers, onion, garlic and lemon juice with a olive oil mayo base. It was a meal worthy of a fine restaurant. Great recipe! Thanks for sharing! I'll be making this again!

      This was GREAT!! Wonderful balance of all flavors. I did cook longer than recommended since I was using foil instead of parchment. I will definitely make this again. Thanks Amber

      This was sooooo good! Just like our favorite Italian restaurant. I was generous with all the ingredients and served the fish with garlic mashed potatoes. I used tin foil to make the packets instead of parchment and it worked great, held in all the yummy sauce. It was the perfect light healthy flavorful meal for a romantic dinner with my husband on a warm spring night... watching the sun set over the mountains... thanks for the recipe! We love it!! namaste :)

      I'm not usually a huge fish fan, but I try to eat it for health reasons. This was the best fish recipe I've ever made! The tomato and basil really seam to cover up the "fish" flavor (which is a good thing in my mind). I made it just like the recipe says and found it quite flavorful. I will definitely make this again.

      I made this as specified in the oven for my husband and he said that it didn't have much flavor. But I made two other fillets and substituted spaghetti sauce instead of the slice tomatoes. He tasted those and thought it had a lot more flavor because of the sauce. I thought it was really good using the spaghetti sauce. I kept all other ingredients the same. The ones with the sauce, I didn't put in a packet. I just baked them in a glass dish.

      This is the best mahi mahi dish we have ever had, including in fine restaurants. I followed the recipe exactly; no alterations were necessary.
