    This is a nice light recipe that I made by special request at a pizza & sub shop that I used to work at. It's strictly a vegetarian dish but even a carnivore like myself enjoys it so hopefully you will too.

    Ingredients:

    Directions:

      Toast the slice of bread (skip this step if you have a toaster oven).
    2. 2
      Put the slice of tomato on the bread.
    3. 3
      Put the slice of Swiss cheese on top of the tomato.
    4. 4
      Add salt and pepper.
    5. 5
      Cook in a microwave for about 30 seconds or until cheese is melted (or cook in a toaster oven).

      Mmmm, yummy! This is really easy and really good! The swiss cheese goes great with the tomato and hearty bread, very satisfying. Thank you so much for sharing this keeper with us, Trs!

      Delicious!! I used Gruyere and it was outstanding with tomatoes. Gruyere has a salty edge to it so I didn't need to add the dash of salt. I used roma tomatoes and pumpernickel bread. Thanks for posting, a great lunch!
