This recipe from "Home Style Italian Cookery" by Pauline Barrese is best made with sun-ripened, homegrown tomatoes.
- 4 medium tomatoes, sliced
- 1 small onion, sliced
- 1⁄2 teaspoon dried oregano
- 4 large fresh basil leaves, chopped (Substitute 1/2 tsp. dried basil if fresh is unavailable)
- 1⁄4 cup extra virgin olive oil
- ground black pepper
- Place all of the ingredients in a salad bowl.
- Serve at room temperature.
