  1. Great appys. I loved how simple these were and added a touch of Parmesan cheese to the mixture. Thanks for sharing, Ev. Made for What's on the Menu tag.

  2. This was good, but I thought that the balsamic was just a little too much for garden fresh tomatoes. Really liked the lemon juice and I added some salt and pepper just before serving.

  3. Very good and simple bruschetta mix. My son - who is not crazy about tomatoes - enjoyed it very much. Thanks for sharing!

  4. Fantastic...I added lots of freshly ground black pepper and some sea salt flakes to the top of each Bruscetta. The addition of lemon juice was new to me and I loved it! Thanks for sharing.

  5. This was a totally new experience for me. I was craving tomatoes and this was a perfect way have them! I made mine a little different--I bought garlic bread that was ready to put in the oven and then I layered some mozzarella on top and then added the tomato and seasonings last. It was done in less than 8 minutes and tasted absolutely awesome! This is a very fast and easy way to compliment just about any meal! Thanks so much for sharing the recipe!! This recipe will be added to my frequently used list of recipes!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
