Tomato and Basil Bruschetta

"Wonderful, fresh tasty Bruschetta. Like we had in Italy....maybe even better!!"

• Yields: 8 slices
• Serves: 8

ingredients

• 8 slices bread (a heavy, dense bread is best, ciabatta is good)
• 2 tablespoons olive oil
• 2 garlic cloves, halfed
• 2 -4 small tomatoes, diced
• 1⁄2 teaspoon salt
• 1⁄4 teaspoon pepper
• 8 leaves basil, sliced into very thin strips
• 2 tablespoons olive oil
• 1 garlic clove, finely minced
• 2 tablespoons parmesan cheese

directions

1. Brown 8 - 10 or so slices of bread in a skillet with olive oil. Placed browned bread slices on a plate, rub each side of the bread with a garlic half -- try to get the garlic scraped on the bread. In a small bowl combine the tomato dices, salt, pepper and olive oil, and garlic - top the toast slices with the tomato mixture. Top with the basil, and then top with parm. cheese. Serve immediately.
